Ingredients:  Serves 4  
3/4 Cup of grated Parmesan Cheese
8 Ounces of Mozzarella cheese
1 Pint of part-skim Ricotta cheese
1 Teaspoon dried Parsley
1 Package of Manicotti pasta
Salt & Pepper to taste
pinch of Nutmeg
16 Ounces of Spicy Marinara
2 Eggs
Directions: 
Cook the manicotti in boiling water until almost done, do not overcook!
In a large bowl combine the remaining ingredients except the sauce and mix well. Pour 1/2 cup of the Spicy Marinara Sauce into the bottom an 11x17 baking dish. Stuff each manicotti pasta tube completely with cheese mixture and place in baking dish. Pour remaining sauce over top and sprinkle with the rest of the parmesan cheese. Place in a pre-heated 350 degree oven and bake for 45 minutes or until cheese bubbles. Let sit for 5 minutes before serving. Serve with bread and salad.
