Ingredients:     Serves 2-3  
Filling
½ lb. hamburger
½ Tsp. Olive Oil
½ Large White Onion, finely chopped
1 red or yellow Bell pepper, seeded and finely chopped
1/3  cup Mexican style corn
Small handfull of Raisins
2 cloves garlic
1 ½ Tbs. Cumin
1 Tsp. Chili powder
1 Package Taco seasoning
2 Cans Mexican Tomatoes
1 can black beans
½ cup Jack Cheese* (Optional)

Crust
3 cups boiling water
1 cup yellow corn meal
½ Tsp. Salt
1 Tbs. Lemon Juice
1 Tbs. Dijon Mustard
Soft Tortillas
Salsa Fresca
Tortilla Chips
Guacamole

Directions:
Brown meat and drain off fat. Over medium heat, add Olive Oil and garlic. When garlic is soft, add vegetables and fry until soft. Add meat and  seasonings then cook for 10 minutes. Add tomatoes, beans and corn and cook for 10 more minutes.
   Boil the 3 cups of water and add cornmeal, lemon juice, mustard and salt and mix. Bring to a boil over medium heat, then reduce heat to low and simmer, stirring often, until thickened, 3 to 5 minutes.
   First sprinkle a layer of cheese then spread the cornmeal mixture over bean and meat mixture and bake in a pre-heated (350°) for 30 minutes. Allow 10 minutes to cool and top with salsa fresca and guacamole. Serve with salad.
