Mix the potatoes and beaten eggs and set aside. Place
a Tbsp. of Oil in a hot pan and fry garlic, onions and peppers until translucent.
Pour mixture into potatoes and eggs. Mix well and season with salt and
pepper. Add flour and mix until it appears the mixture is beginning to
stick together, Put into fridge for at least 15
minutes.
Heat remaining oil in fry pan making sure the entire
pan is covered with oil. Take a heaping tablespoon of the cooled mixture
and place in hot oil. If you are using a large enough pan, you can put
three or more globs in the pan. Allow the globs to stay in a ball shape
for about 15-20 seconds, before you push the mixture flat using a spatula.
This keeps the mixture from coming apart. Cook until golden brown on each
side and remove from heat and allow to 3 minutes for draining. Serve with
Sour Cream and applesauce (European Style), or with Salsa (American Style).
May be served as a side dish or as the main dish. |
