Ingredients:  Serves 6  
      1 Lb. Sweet Italian Sausage
      1 Lb. Smoked Ham (Diced)
      2 Stalks celery, (sliced)
      1 Green Bell Pepper, (diced)
      1 Tsp. Cayenne Pepper
      1 Tbsp. Cumin
      1 Large white onion, (diced)
      2 Cloves garlic, (minced)
      1 Bay Leaf
      1 (28 ounce) Can crushed tomatoes
      2 Cups chicken broth
      1 Cup long-grain rice
      3 Tsp. Tabasco sauce
      1 Tsp. Salt
      1 Lb. Chicken breast (Optional)
      1 Lb. Shrimp (Optional)
      1 Tbsp. Olive oil
Directions:
Heat the Olive oil in a 3 qt. Pot and add 1 clove of garlic (minced). After garlic is aromatic add about 1/3 of the diced onion and 1 Tsp. Tabasco sauce. After onion is translucent add rice and cook, stirring continually for about 2 to 3 minutes, then add chicken broth.
Cook sausages in 12-inch skillet over medium-high heat until well browned on all sides, turning frequently. Remove sausages to plate and retain drippings. When cool enough to handle crumble sausages with fingers until like ground beef in texture.
Dice ham and sauté in sausage drippings. At this point chicken (sliced into small chunks or whole shrimp may be added. Now add celery, green pepper, onion, garlic, cumin and cayenne pepper to same skillet; cook 3 minutes over medium heat stirring occasionally. Add tomatoes, rice, Tabasco, salt, Bay leaf, and sausages. Cook over medium heat for 10 minutes. Do not allow to dry out. Serve with bread and salad.
