| Ingredients:

2 lbs. Ground Turkey
½ Tsp. Olive Oil
1 Large Onion, finely chopped
1 red and 1 green Bell pepper
2 Large Anaheim Chili Peppers
3 cloves garlic finely chopped
2 Cans Mexican Style Whole Tomatoes
1 8 Oz. Can Tomato sauce
1 Lb. Chili beans
1 package “Six Gun” chili mix
½ cup Jack Cheese
Sour Cream

| Directions: |
Bring beans to a low boil over medium heat and cook until
tender, (approx. 1 hour.)
Flame roast the two Anaheim Chilies and set aside sealed
in a plastic bag,
Brown meat and drain off fat. Over medium heat, slightly
brown the minced garlic in the olive oil, then add the vegetables and cook
until soft. Add meat and seasonings and cook until aromatic. (Always
add seasonings prior to liquids)
Remove as much of the skins of the Anaheims as you can
and mince inners less the seeds. Discard the seeds and skins. Add
tomatoes, and minced Anaheims and reduce heat to simmer for 1 to
2 hrs. Add water if necessary. Add beans approx. ½ hour prior
to serving. Garnish with sour cream, cheese and Cilantro and serve with
flour tortillas. A salad may be added… |
