Ingredients:  Serves 6  
      1 Lb. Chicken Breast
      3 Tbs. Fresh Basil
      1 Tsp. Oregano
      6 Large Mushrooms (Sliced)
      1 Large White Onion (Chopped)
      1 Large Red Bell Pepper(Chopped)
      1 Large Yellow Bell Pepper(Chopped)
      1 Lime
      ¼ cup Fresh Parsley
      ½ oz. Extra Virgin Olive Oil
      3 Cloves Garlic (Minced)
      Salt & Pepper
      2 Cans Italian Style Tomatoes
      ½ Tsp. Cayenne Pepper
      2 Cans Chicken Broth
      2 Packages Almond Pilaf
Directions:
Cook Pilaf using chicken broth as per instructions on rice Box.  Cut Chicken into bite-size pieces and cook in a small amount of olive oil.  After the chicken is done remove from fire. Add remaining Olive Oil to hot saucepan.  Add minced Garlic and then after you smell the garlic cooking add the onions and peppers.  As soon as the onions are cooked, add the juice from the lemon, Chicken and mushrooms along with the seasonings and cook until mushrooms are tender.  Then add Tomatoes and Parsley then cook for approx. 10 minutes.  Salt and pepper to taste.  Serve over the rice pilaf with a side salad and bread…
